Joe’s special
A San Francisco classic. This is a quick, satisfying meal we make when it’s dinnertime but nothing has been done!
 Ingredients:
- Eggs 
- 1 pound of sausage or ground pork 
- Olive or vegetable oil 
- Onion 
- Vegetable (great with spinach or power greens, but just fine with frozen mixed vegetables, corn or peas!) 
- Sourdough or your favorite bread 
 Directions: 
 
- Slice onion and brown it in a large frying pan with olive oil. Get them nice and carmelized. 
- Add the meat until browned. If using ground pork, season with salt and pepper, or as desired. 
- Steam your vegetables in a separate pot, and add them to the pan. 
- Whisk 4-6 eggs in a bowl and add them to the frying pan, stirring to cook them. 
- Serve with toasted bread- it’s a meal in minutes! Some like to add a little ketchup or chili sauce.
